Peach & Cardamom Couscous Salad
DESCRIPTION
A refreshing salad that pairs fluffy couscous with warm spices, herbs, and juicy peaches.
INGREDIENTS
- 1 cup couscous
- 1 cup boiling water
- 1/2 tsp ground cardamom
- 1/2 cup EU canned peaches (chopped)
- 1/4 cup chopped mint
- 1/4 cup chopped parsley
- 1/4 cup chopped cucumber
- Juice of 1 lemon
- 2 tbsp olive oil
- Salt to taste
INSTRUCTIONS
- Pour boiling water over couscous and let sit covered for 5 minutes.
- Fluff with a fork, then mix in cardamom, herbs, cucumber, and peaches.
- Add lemon juice, olive oil, and salt. Toss well and chill before serving.
